Gomi Boys produce contemporary, creative ramen and hand made noodles.

Our noodles are made from organic Australian whole wheat.

While we have a focus on fish and oceanic flavours we also offer a broad range of vegan and other dietary options.

Gomi is the japanese word for garbage, ごみ.

It also refers to the 5 elements of taste; savoury, sweet, sour, bitter and umami.

Our key philosophies as a business are sustainability, minimizing waste production and local food provenance. Using imported ingredients only when there is no other alternative.

A big part of the flavour of our ramen is achieved through the use of Niboshi, にぼし.

Niboshi is a dried fish which has been boiled in a brine, salted to mimic the ocean.

Our food is obviously inspired by Japanese principles and philosophy, but we aren’t Japanese and don’t pretend to be.

We take this ethos and apply it to our own experiences and culture here in Australia.
